Simple Salad Vinaigrette Recipe
A little something to wet your whistle while you wait for my upcoming cooking: Hunter Moon Homestead; A Nourishing Memoir. I make this dressing at least once a week. It's a beautifully simple vinaigrette that enhances any type of greens.
INGREDIENTS
1 small/medium shallot*
3 pinches of good quality sea salt
2 teaspoons fig jam
2 teaspoons Dijon mustard
1 ½ tablespoons lemon juice or good quality vinegar*
¼ cup cold pressed olive oil
Fresh ground pepper to your taste
PROCESS
1. Fine chop your shallot. You should have approx. ¼ cup.
2. Put shallots, fig jam, Dijon mustard, sea salt, and vinegar into a small bowl. Stir together and let sit for 10 minutes. This resting will soften the shallots and help to meld all of the flavors together.
3. Whisk in a good quality olive oil until the dressing is to your desired thickness.
*Shallots are a bit milder than onions and have a slightly higher sugar content. The shallots are a key ingredient to this simple and versatile dressing.
*You can find a vast variety of specialty vinegars these days. The taste of the vinegar you use in this dressing can really change the taste. Feel free to experiment with some of your favorites. My favorite vinegar for this recipe is rice vinegar.
