But it was their move to Hunter Moon Homestead that allowed Kate to fully embrace her twin passions: cultivating the land and feeding the soul.
The 1903 farmhouse they purchased had barely changed over the decades—no insulation, an ancient wasp-riddled roof, rooms overtaken by mice and time. Yet beneath the decay, Kate saw old bones worth saving. Alongside Rick, she’s been restoring every room with tenderness, just as she tends the soil in her gardens. She grows medicinal herbs for her skincare line, Essential Apothecary Alchemist, and cultivates heirloom vegetables that grace the farm-to-table dinners she prepares for guests at their art and writing retreats.

About The Author:
Kate Poole is a visual artist, painter, and hospitality provider who believes that nourishment—whether through food, art, or the natural world—is an act of love. She is the co-creator of Hunter Moon Homestead, a 23-acre creative sanctuary nestled in the rolling hills of Idaho’s Palouse, where she and her husband Rick have spent years restoring a turn-of-the-century farmstead into a place of refuge and inspiration.
She lives at Hunter Moon Homestead with Rick, their dog Jasper, botanical and vegetable gardens, and the ever-changing pageant of birds on the pond. She is currently at work on her food memoir and continues to paint, create, and welcome guests to their corner of the Palouse, where the sky stretches 360 degrees and the quiet of nature reminds us all to breathe.
