Summer Recipe: Greenhouse Tomato Salad

The first tomatoes are coming on in our greenhouse this month. We had such a cold and wet spring, I knew that we would go from cold to hot in July. The tomato plants in the garden are covered with yellow star shaped flowers and are still weeks away from producing edible fruit. The green house has been a real game changer for us in our short growing season. This simple salad is one you can do for your own heirloom variety of tomato or ones you can get from your farmers market or grocery. 

Greenhouse Tomato & Burrata Salad

INGREDIENTS

2-3 Fresh Heirloom Tomato
A few pinches Flake salt (like Maldon)
1 pkg Fresh Buratta Cheese
Bundle of Fresh herbs (like parsely, thyme or basil), thinly sliced
1 small purple onion, sliced thin
2 tbs good quality olive oil

INSTRUCTIONS

Slice your tomatoes into thick 1/4 inch slices and arrange them on a beautiful salad plate. Sprinkle them with a good quality flake salt making sure to salt each slice of tomato. The salt will bring out their natural sweetness.
Add a quarter slice of soft burrata style cheese.
Chop and sprinkle fresh herbs onto the tomatoes. I use parsley, thyme, and basil from the herb garden. Sprinkle over your thin slices of purple onion.
As a finishing touch, drizzle a good quality olive oil over the tomatoes and the cheese.
If you choose you can serve this salad with thick slices of toasted french bread or baguette. You can use the bread to sop up the oil and the tomato juices. Yum!
