Yam And Ginger Mash Recipe

Rick and I tested a recipe last week that I want to share with all of you. This recipe can be a lovely accompaniment to so many dishes, or just eaten on its own.
Ingredients
3 medium yams or sweet potatoes (or a combo!)
2 tablespoons finely grated fresh ginger
4 tablespoons unsalted butter
Cashew milk, to taste (substitute with coconut, milk or cream - whatever you like)
Pinch of salt
Instructions
- Peel the yams and cut into 1" cubes
- Place the yams and fresh ginger in a sauce pan and cover with water. Lightly simmer, over medium heat, until tender (10 minutes).
- Drain the yams and return them to the saucepan. Mash the cooked yams with the butter, a pinch of salt, and enough milk to make it smooth.
